A simple basic recipe is really all that is needed to create countless variations cupcakes.
Here’s my recipe!
This cupcakes is a litle lighter because I use cocoa powder instead of chocolate in this dough.
You can variate with berries, chocolate chips, jam or whatever your imagination think of . And you can also variate the topping using simple royal icing glaze to make big buttercream «roses».
22 muffins / cupcakes
- 7 oz butter (200 gr)
- 3 eggs
- 8 oz sugar (230 gr)
- 11.7 oz flour (330 gr)
- 1.5 teaspoons baking powder
- 1.5 oz cocoa powder (50 gr)
- 2 teaspoon vanilla extract
- 1.5 c + 5 Tbsp milk (4 dl)
Let eggs, butter and milk get to room temperature.
Cream together butter and sugar until light and fluffy.
Let the machine run at medium speed and remember to scrape the sides of the bowl, so everything is mixed well together.
Add one and one egg and mix well between each addition.
Sift together all dry ingredients in a bowl, and set aside.
Add 1 / 3 of the flour quickly followed by half of the milk. Repeat in quick additions and last add rest of the flour.
Stop before everything is completely combined.
Scrape the sides and bottom of the bowl. Turn the mixer on at full speed for a few seconds. STOP!
Fill muffin liners 1/3 up. (about 2 tablespoons) If you want a high top on your cupcakes, slightly increased the amount batter in each liner.
Bake in the lower section of oven at 350 F degrees for 20 minutes.
Incert a stick in the center of a cake and it should be coming out dry. Or tap on the top of cupcake and it should be firm.
When they are freshly made, they will have a small peak, it decreases slightly after 30 minutes.
Let the muffins rest in the muffin pan for 10 minutes before placing on a wire rack to cool.
