This is a simple recipe for a verry tasty chocolate cheet cake that can be served guests for any occasion.
Today I added some simple roses on top , because I`m having a friend coming over for a visit.
It looks at a little more fancy, and makes a little more honor to my guest.
As decoration I made some tiny roses of marzipan. By rollig marzipan thin. I cutted the rolled marzipan into 12″ x 2″ (10 × 5 cm ) and fold eash double, dont`t press to hard, because you want some air inside for a more fluffy look. Then I gently rolled it in to a rose.
…. but first we have to bake the cake
- 12.5 oz (350 gr) butter
- 12.5 oz (350 gr) sugar
- 12.5 oz (350 gr) flour
- 3.5 tsp baking powder
- 3.5 Tbsp cocoa powder, leveled
- 6 eggs
- 2 to 3 tsp instant coffee
- 3.5 Tbsp boiling water
- 2 to 3 tsp vanilla sugar / vanilla exstract
- a little salt if you use un salted butter
Glaze: Ganashe
- 7 oz (200 gr) chopped chocolate
- 8 oz weight (225 gr) of boiling heavy cream
- 1 to 2 tsp Cognac (optional)
Start by melting the butter and cool it to room temperature.
Sieft the flour, cocoa powder, baking powder and vanilla sugar, if you use that, into your mixing bowl.
Dissolve the coffee powder in the hot water.
Beat the eggs rapedly by hand.
Add the sugar and salt to the flourmixture and combine.
Start the machine on low speed and pour in the eggs, coffee, melted butter and vanilla extract, if you use that. Combine for 1-2 minutes until the batter is smoth and shiny .
Pour the mixture in a cake pan covered in baking paper. 8″ x 8″ (20 x 20 cm)
Devide batter evenly and level the surface
Bake in middle section of oven at (350 F (180 C ) degrees for 35 minutes, or until a stick inserted in center of cake comes out clean.
Let the cake cool in the tin for 10 minutes before the transfering it onto a wire rack to cool.
Now the fun part
Glaze can also be poured onto the cake before it is cut and decorated with any kind og sugar sprinkles.
Do you want clean cut edges, without the running chocolate down the sides ?
Pour Glaze onto the cake and cut into pieces and decorated when the glaze has set. Cooling in the fridge is a time saver.
Cut the cake into 20 pieces.
Heat the heavy cream.
Chop the chocolate into smaller pieces.
Pour the boiling heavy cream over the chocolate and let it rest for a few minutes.
Stir until smooth and shiny.
When the glaze slightly thickens, pour it gently over the cake.
Add the marzipan roses before the chocolate sets completely.
