I love the taste of chocolate and lemon together, and with this light icing on top … it was heaven.
First, you need lemon curd.
Halfe the portion from my recipe is all you need. But if you makes the whole portion, you can freeze the rest for 3 months. Lemon curd can be made a day in advance.
Recipe for Lemon curd.
Then you need a recipe for chocolate cupkakes. I have used my basic chocolate cupcake recipe with cocoa to make these.
Recipe chocolate cupcakes with cocoa
Prepare a muffin pan with paper liners .
Put 1 tablespoon of batter in the bottom of each form. Then added 1 teaspoon lemon curd in each. Finally, top it with another 1 tablespoon muffin batter.
Bake in the lower section in the oven at 350 F degrees for 20 minutes.
Let them cool for 10 minutes in the muffin pan before transfering them to a wire rack.
The cupcakes can be baked a day in advance.

This icing is best to apply using a piping bag and a tip. I used large open star No. 14
