Oreo, the little dark cookie that has conquered the world.
Crispy crunch with the soft and sweet vanilla filling.
It is easy to buy a package, but it is more fun to make them ypur selves. And they are very good

Dough: crisp chocolate wafels !
- 8.5 oz (240 gr) unsalted butter
- 8 oz (220 gr) sugar
- 1 Tbsp potato starsh
- 12 oz (340 gr) flour
- 2.5 oz (75 gr) cocoa powder
- 1/2 tsp baking powder
- 1 tsp vanillaextract
- 1/2 tsp salt
- 1 egg
- 1 egg yolk
Filling

3.5 oz (100 gr) unsalted butter
- 10 oz (270 gr) powder sugar
- 2 tsp clear vanilla extract
Set the butter and eggs on the couter to reash room temperature.
Sift all the dry ingredients in a bowl, and set aside.
In the mixing bowl cream togehter the butter and sugar until soft, light and fluffy.
Add the egg and yolk, and mix on medium speed for 3 minutes.
Add all dry ingredients and mix together to a firm dough. Stop the mixer when the dough is just combined.
Knead dough using your hands to gather it into a firm lump.
Wrap it in a plastic bag and put it in the refrigerator for at least 3 hours
Remove the dough from refrigerator and divide it into 3. Knead one part to smooth, but do not hold it in your hands to long, it will become sticky.
In order not to add more flour into the dough, it is a good idea to roll out the dough between two sheets of baking paper to 1/8″ thick.
Place the cookies on a baking tray lined with baking paper and bake them for about 7 to 8 minutes at 375 F (190 C )degrees.
Drag the baking paper whit the cookies still on and slide it on to the couter and wait a few minutes before transfering them on to a wire rack .

Mix everything together in a bowl and do NOT use the mixmaster . I disappeared in a cloud powderd sugar and got a bit of a cleaning job after.
So plan B was to knead to combine using clean hands, and that`s just the right way to do it.
And in the middle of powdered sugar and frustration, my husband came home with a beautiful bouquet of red roses for me. So now I`m smiling again. 🙂
Put the filling in the fridge for a while to cool.
Roll the filling out between two sheets of baking paper . Use the same cookie cutter you used to make the cookies.
Sandwich the filling between 2 cookies and gently press the together.
