During the summer I like the cakes i make to be quick, easy and delissiouse of course 🙂
So today I made a chocolate pudding pie, and it was so nice to sit outside in the shade after dinner and enjoy a cool piece of pie on my plate.
This cake yield an 10 » (25 cm) cake or pie dish. Use a spring form, pie dish with a loose bottom or a cillikon form, so it will be easyer to tranfer the pie on to a serving tray.

Pai crust:
- 5.7 oz (160 gr) crushed graham crackers
- 3.2 oz (90 gr) melted butter
- 2 oz (60 gr) sugar
Pudding:
- 1 Tbsp cocoa powder
- 0.5 oz (15 gr) corn starch
- 2 oz (60 gr) sugar
- 3.4 fl oz (1 dl) heavy whipping cream
- 10.3 fl oz (3 dl) milk
- 3 oz (85 gr) chopped dark chocolate / chocolate semisweet chips
Cream topping:
- 10 fl oz (3 dl) heavy whipping cream
- 3 tsp sugar
- 1 /2 teaspoon instant coffee powder
- 1 1/2 tsp cocoa powder
Crush the biscuits using a rolling pin or a drinking glass. Poure the crumbs in a mixing bowl and add the sugar.
Pour in the melted butter and mix well .
Devide the crumbs in the cake pan and press up an edge and level using a drinking glass so it becomes a depression in the midle.
Bake at 350 F (180 C) degrees for 10 minutes .
Let the crust shill in the pan.
Pudding:
Bring the water in a double boiler to simmer. It is important that the mixing bowl on top does not directly touch the hot water.
Poure all the dry ingredients in the mixing bowl of the double boiler. The best way to prevent lumps is to sift the cocoa powder.
Pour in the milk and heavy cream and stir until everything is combined and smooth.
Weigh the chocolate and set aside.
Set the mixing bowl on top of the simmering water and stir constantly.
After 10 minutes the pudding start to thickend and it will be easier to stire using a rubber spatula.
After another 5 minutes, add the chocolate and let it melt into the pudding. Stir for 5 minutes more.
Pour the pudding into the depressionin in the crust and level the surface.
Let cool for 3 hours.
Do you want whipped cream topping ?
Beat sugar and heavy cream until soft peaks.
Remove half of the cream and mix in cocoa powder and coffee powder in the remaining whipped cream.
Add both creams in a piping bag fitted with large star tip attached and decorate pie as your choice.
Some fresh strawberries at the side will also tase delicious
