Chocolate and Oreo Muffins !

Muffins are so easy to make. A big mixing bowl, a hand whisk and a rubber spatula is all the equipment needed to make these big juicy yummies .
You can bake  them in muffin tray for large or medium sized muffins , or line small bowls / coffee cups with muffin liners and bake in them.

… Just remember that a  coffee cup or a bowl takes longer to cool after being in the oven and continue to «bake» the muffins a couple of minutes after being taken out of the oven.

This batter makes 9 muffins baked in the XL tray or 12 muffins baked in a medium tray.

You will need:

  • 1 pkg Oreo cookies
  • 3.5 oz (100 gr) chocolate chips or chopped chocolate
  • 2 large eggs
  • 8.2 oz (230 gr) sugar
  • 8.6 fl oz (2.5 dl) butter milk
  • 2 oz (60 gr) melted butter
  • 4 Tbsp  canola oil
  • 2 tsp vanilla sugar or vanilla extract
  • 10.7 oz (300 gr) flour
  • 1.7 oz (50 gr) cocoa powder
  • 2.5 tsp baking powder
  • 0.5 tsp baking soda
  • 0.75 teaspoon salt

Crush the oreo cookies into crumbs and mix it with chocolate chip and set aside.
Melt the butter in a small sauce pan over medium heat and remove from heat. Poure in  canola oil, vanilla extract and butter milk and mix well.

In a small  bowl, whip  egg and sugar until it gets a little lighter in color and just a litle fluffy.

Pour in the butter and milk mixture and beat well.

In a larger mixing  bowl add all the dry, and whip some air into the flour. You can sift all together if you prefer that .

Poure the wet ingredients  into flour mixture,  all at once. Whisk together until just combined. The batter will look lumpy , and that is exactly right.

Fold in the oreo crumbs and chocolate using a rubber spatula.I saved some of the  mixture to sprinkle on top of each muffin before baking.

Fill muffin liners  ..I filled mine to little  this time, so I will fill them a litle bit more next time I bake .Sprinkle with oreo and chocolate, if desired.

Bake in the lower section of oven at 410 F (210 C) degrees,
20 to 25 minutes (large muffins)
17 to 20 minutes
(medium muffins) … until a stick inserted in center of a muffin comes out clean. Some of  the melted chocolate will show on the stick .… Or you can press gently on top of a muffin and it will bounce back when it is baked
