Gisella’s Sicilian Pizza Dough recipe !

Via Facebook, and my cake page sweets2share , I often meet new  people from all over the world.
couple of weeks back,  suddenly Gisella from Sicily poped up and we chatted  and became good friends. She must be a very patient person, because everything was communicated in Italian with only Google translate as help.
She gave me her famelys recipe for pizza doug  and it taste so good, although I do not have a real stone pizza oven .
I have Jami Oliver`s  pizza stone, and we’ve really gotten the hang of making a thin and crispy pizza crust.

Portion, a small pizza fit for a hungry man!

  • 3.5 oz (100 gr) flour
  • 3.5 oz (100 gr) durum flour
  • 1 /2 teaspoon salt
  • 3.9 oz weight (110 gr) lukewarm water
  • (0.2 oz (5 gr) fresh yeast
  • 1 /2 Tbsp extra virgin olive oil
  • 1 /4 tsp sugar

Filling and topping:
I do not know what Gisella and her family put on their pizza, but this filling  is a hit in my famely.

  • 3.5 oz (100 gr) ground beef
  • mashed  garlic
  • mashed jalapenos
  • 1 Tbsp taco seasoning
  • peperoni
  • bell pepper, sliced
  • onion, sliced
  • jalapeno
  • corn
  • pineapple
  • Champion
  • Cheese
  • mozarella

Mix together flour and salt in a mixing bowl.
If you want make it the  real Italian way …  mix it in a pile on a clean couther  and knead by hand.

Desolve the yeast  in the water.
This recipe asks for very small amout of  yeast, and that give the pizza crust  a delisious consistency.

Make a depression / crater in the middle of the pile of flour and pour in the liquid, olive oil and sugar.
Begin working with the dough  so the flour falls from the sides and down into the  crater little by little.

It will take a few  minutes to combine it all  into a dough.
Then draw deap breath, if you do this by hand,  and knead for 8 minutes.
If you are using your standing mixer, stay with the mixer at all time and knead  for 8 minutes.
The mixer will make some «jumps» while working with the dough, so stay foot so the mixer  don`t crash on to the floor.

Form a round ball and press it slightly into the bowl and cover.
Let the he dough  raised for 60 minutes .

While the dough raise, we can make the  Spicy meatballs.

Press  both garlic and jalapeno through a garlic press.
Add taco seasoning and knead until fully combined.

Set aside.

The dough is ready, so lets make a pizza !
Put a baking paper on top of a clean kitshen towel. That will keep the bakin  paper more stabil.
Press and drag the dough  into a thin crust.
If the dough has lost it`s elasticity, allow it to rest for a few minutes and it becomes smooth.

Spread pizza sauce over the dough and sprinkle with cheese.

Put on  smaller pieces of meat mixture and devide evenly. I put the meat on  raw and it it will be fried during baking.
Add more topping as you like.

Bake at 435 F ( 225 C )degrees in the middle section in the oven for 15 minutes , until cheese is melted and bottom is crisp.
Do you have pizza stone?
Place stone in oven on a baking tray, to become  warm …

… put on the pizza with the baking paper still under and set the timer for 5 minutes.
Loosen the pizza from the baking paper using  spatula and pull the paper out from under the pizza.  Now the pizza rest  straight on top the stone.

Bake for 10 more minutes and enjoy!
