You can buy all kinds juice , but nothing beats a glass of ice cold, fresh and homemade lemonade.
Have you not tasted it yet … I really recommend that you to give it a try.
This takes juice to new heights.
As a base for all types of lemonade you must have lemon lemonade. You will get the recipe in this posting.
It is so good as it is added water and lots of ice cubes.
Furthermore, I will in the next few days post several types of tastes to add to the lemonade, made of what you see in the picture above.
All of the fruits and berries I have chosen to my lemonades has great fresh taste and will also give the lemonade lovely colors. This is a luxury drink sitting in the sun in your garden, with a drinking straw and a high SPF
You need a cutting board, sharp knife and a grater for the lemon zest. You can use a standard grater, if you don`t have a zest.
You will also need a lemon squeezer of one kind or another. I love my large squeezer I foud in a second hand store.
My portion is from 11 large ripe lemons and it yield 38 fl oz (1.1 liter) concentrat.
The darker yellow lemons contains most juice and is easiest to squeeze, so pick them
First pour boiling water over the lemons, and let them soak in the hot water for 1 minute. That releases some of the sweetness in the lemon juice.
Remove the lemons from the water and roll them hard against the table until you feel that they softens.
My «assistant» and «chief of tasting» were eager to help me today.
This process will make sure you get moste of the juice sqeezed from the lemons.
Cut the lemons in half and squeeze as much juice as you can. It’s fine if some of the flesh comes with, but all the stones should be removed.
Grate the peel of 1 to 2 lemons and add it to the pressed juice. Remember that the white layer under the yellow skin tastes bitter, so try to avoid to grate that.
Mixing the concentrate:
- 3.5 fl oz (1 dl) squeezed lemon juice
- grated lemon peel
- 1.2 fl oz (35 ml) water
- 2.3 oz (65 gr) sugar
Measure up how much lemon juice you have, and set aside.
Measure up the right amount of sugar and water and poure it in a sauce pan. On high heat bring it to a boil and let it simmer for 5 minutes befor pouring in the lemon juice.
Bring it to a boil once more while constantly stirring.
If you want you can strain the concentrate. Put it in the fridge to cool.
The concentrate will stay fresh for 5 days, or you can freeze.
Mixing a drink :
- 1 part concentrate
- 4 parts water
Mix up a mug full and keep in the fridge, and when the summer heat becomes too much … fill your glass with ice cubes and pour in some cold lemonade. Garnish if desired with strawberry, lemon, mint leaves or elderflowers and a drinking straw.
