This cake has two names here in Norway. Kvæfjord (Kvaefjord)cake is the officiale name, but we all know it by the name » the best cake in the world».
This recipe is for a small sheet pan, if you want a large cake for a party, make 1 and 1/2 portion of the batter and filling:
- 5.7 oz (160 gr) soft butter
- 5.7 oz (160 gr) sugar
- 5 egg yolks
- 1 egg
- 5 tablespoons milk
- 5.7 oz (160 gr) flour
- 1.5 tsp vanilla sugar / vanilla extract
- 2 teaspoons baking powder
- 5 egg whites
- 8.9 oz sugar
- sliced almonds
- 1 1/2 cup wipped heavy cream
- 2 tablespoon sugar
- 1 1/2 cup vanilla pastry cream
- add rom as taste if you want to.
To make the cake
Cream the room tempered butter with sugar to light cream. Add egg yolks one at a time fully incorporating after each addition. Stop the mixer and scrape down the sides of the bowl.
Add the dry ingredient mixture alternately with the milk, try not to overwork the batter at this stage.
Line the pan with baking paper and fill the pan with batter and gently scrape out thin to cower the pan. Sett aside.
Whip the egg whites on high speed until stiff peaks. Wiht the mixer still on high speed slowly add the sugar to fully incorporated.
Spread the meringue on top of the batter in the sheet pan.
Sprinkel sliced almonds on top.
Bake at 347 F (175 C) in lower section of the oven for 45 minutes
Remove the pan from the oven and cool to room temperature.
Cut the cake in two halfes and put one halfe on a cake tray. Make the filling by wipping the heavy cream with sugar and gently fold in pastry cream.
Spread all filling on top of the cake on the tray and put the other halfe on top.
