Devil`s Food Cupcakes with Espresso Icing !

On May 19 is the nationale Devils Food cake day in the US, and I think it is really unfair to the rest of the world. So I like to adopt the tradition here in Norway:) … And share my recipe for Devils Food cupcakes with espresso Icing!

These are so tender,  light and dark, both in taste and consistency. Anyone who loves the dark bitter chocolates will love these too.

makes 30 cupcakes .

  • 5.3 oz (150 gr) semi sweet chocolate
  • 5.3 oz (150 gr) butter – at room temperature
  • 7.8 oz (220 gr) light brown sugar
  • 3 eggs – at room temperature
  • 10.7 oz ()300 gr flour
  • 1 oz (25 gr) cocoa powder -I used Van Houten
  • 1  tps baking powder
  • 1 tsp  baking soda
  • 1 /2 tps salt
  • 2 tsp vanilla extract
  • 8 fl oz (2.3 dl) milk – at room temperature

Sift all the dry ingredients together in a separate bowl and set it aside.

Melt the chocolate in a double boiler and cool slightly.


Beat the brown sugar and butter to soft, light and airy, it takes a few minutes so be patient.

Crack the eggs into a small bowl and whip to well combined.

Pour in the eggs in 3 additions and mix well between each addition. At this point, the batter can semes separated, just increase the speed of the mixer and beat until  smooth and fluffy.

Then pour the melted chocolate. Beat until your batter looks a lot similar to the picture below.

Allmos ther :) Add flour and milk in rapid additions starting and ending with flour while the mixer is running on low speed. Start with 1 / 3 of the flour ….

…. then pour in 1 /2 of the milk and then flour, milk and finally the remaining flour.
Stop the mixer and scrape down the sides and bottom of the bowl with a rubber spatula. Turn the mixer on full speed  for 10 seconds for the final finish.

I do not recommend tasting the batter, because then you can not stop eating :)

Fill muffin liners 1 /3  (about 2 tablespoons for medium size)

Cupcakesene baked in the lower part in the oven at 350 F (175 C) degrees for 18 to 21 minutes until they feel soft but spunchy to the toush. You can also incert a tester in one cupcake and see if it comes out clean.

Let the cupcakes cool in the pan  for 5 minutes before transfering them on to a wire rack to cool completly.

    Thanks for sharing. Yes it is true here in the US we will think of any reason to make a food day of it. No wonder so many here are overweight but it is a cupcake there is always room for one of those. These look amazing.
