This icing taste so good on a rich flavored chocolate cake .
- 3 egg whites
- 5.3 oz (150 gr) sugar
- 2 tbsp light corn syrup or 3 tsp of glucose
- 1 tsp espresso instant coffee powder
Start by boiling a medium sauce pan half filled with water!
Add alll the ingredients in the mixing bowl / double boiler, placed over the simmering water.
Beat with the mix master until the cream is warm to the touch and is light, white and fluffy like the picture above. Soft peakes.
Remove the bowl away from heat and continue to whip either with the mix master or standing mixer until the icing is stable at room temperature. Remember to add the coffee powder!
The icing cooled cupcakes. Sprinkle a thin layer of espresso instant coffee powder as garnish.
This icing can be used on countless, and the flavor of coffee can be changed to vanilla or other falvors .
