Some recognize this cake as  «Monkey Bread»  other as «Pull-a-Part coffee cake».
I have seen many recipes on the internet for this cake, and a number of different ways to make it.
I choose to make my own recipe using a litle bit less sugar and butter. These contain so much good taste and the dough is a dream to work with.
I think I will make this as weekend treat for the famely every once  in a while, and eat with good conscience
:)

Dough:

  • 1 pk yeast fresh or dry yeast
  • 1 tablespoon sugar (I)
  • 6.8 fl oz (2 dl) lukewarm water
  • 6.8 fl oz (2 dl) lukewarm milk
  • 1 egg, beaten
  • 3.5 oz (100 gr) butter, diced
  • 1 teaspoon salt
  • 3.5 oz (100 gr) sugar (II)
  • 1 / 2 teaspoon cardamom
  • 18 – 26 oz (500 – 750 gr) flour

Filling:

  • 5.3 oz (150 gr) melted butter
  • 5.3 oz (150 gr) sugar
  • 2 tablespoons cinnamon

Glaze:

  • 1.5 oz (50 gr) melted butter
  • 9 oz (250 gr) powdered sugar
  • 1 teaspoon vanilla extract
  • 4 to 8 tablespoons warm water

Add sugar (II), cardamom, salt, 250 gr flour and butter cutted into cubes in the baking bowl.

Poure sugar (I) milk and water in a separate bowl and heat it to about 40 C degrees. Stir in yeast and let it rest for  20 minutes.
Beat together the egg in a separate  small bowl.

When  the yeast mixture is ready, start  the mixer running on low speed, and pour in the milk.

Then pour the beaten egg .  Let the mixer blend the dough until the butter are dissolved .
Now the dough is quite loose  so it should be added more flour in small additions of 2 tablespoons at a time and mix well between each addition.
When dough begins to come together addsmaller amount of flour  until the dough comes away from the  bottom of bowl.
Knead for a few more minutes, but do not add more flour, even if there is more left.

Knead the dough into a smooth lump and put it back into the mixing bowl.

Cover the bowl and place it in a warm place near the  oven. It will rise until doubled in bulk ( 45 – 60 minutes).

I love the feeling of a warm, smooth finished rised dough 🙂  … But ..
Press dough down into the bowl again and let it rest for  15 minutes.

Mix together sugar and cinnamon to the filling and melt the butter over low heat.

Take smaller pieces of dough, you can roll them  into small balls, but it is not necessary.
Drop the dough piece into the melted butter and let the exsess butter drip of .

Roll them in the sugar mixture so they are completely covered.

Without any particular system and more randomly, place the balle  the rolls in a bunt pan.


Covern the pan  using a clean kitchen towel and put in a warmplace near the oven  to rise for 30 – 40 minutes.
Bake the cake in the lower section in the oven at 200 C degrees for about 45 minutes.
Half way into the baking time it  may be necessary to add a sheet of baking paper on top of the cake to prvent the cake to get too dark crust. My cake got some dark spots.

Let the cake cool in the pan for 10 minutes before transfering it  onto a wire rack.

This cake will  not be light and golden to the color. The sugar melts during baking and will leave the cake a more darker color.

While cake is still lukewarm, pour on the glaze. Make sure the cake is not too hot, if so the glace will  drain off the cake.

Melt the butter and mix everything together in a bowl. Add the water little by little, so you have more controll to make the right consistency .

Right now your house will smell like heaven :)
