Caramel & Cinnamon Rolls !

This is the regular cinnamon rolls that are baked in a sheet pan filled with alot of goodys !
After they are  baked, the rolls are resting on a bed of delicious warm caramel sauce.
Oh, my gosh!

I should stop making such I can not help eating :)

Dough:

  • 1 tablespoon sugar
  • 1 1 / 2 pk Yeast (dry or fresh)
  • 6.7 fl oz (2 dl) water
  • 6.7 fl oz (2 dl) milk
  • 1 beaten egg
  • 3.5 oz (100 gr) butter
  • 3.5 oz (100 gr) sugar
  • 1 teaspoon salt
  • 30  – 33 oz (850 -1000 gr) flour

Filling:

  • 1.5 oz (50 gr)  brown sugar
  • 3 tablespoons sugar
  • 2 tablespoons cinnamon
  • 2 .5 oz (75 gr) butter

Caramel:

  • 5 oz (150 gr) brown sugar
  • 2.5 oz (75 gr) sugar
  • 3.3 fl oz (1 dl) melted butter
  • 3.3 fl oz (1 dl) milk or cream
  • 4.5 – 5.25 oz (120 – 150 gr) chopped walnuts or pekans

Pour 14 oz (400 gr) of the flour + salt, sugar and butter divided into cubes into the mixing bowl.

The rest of the flour you  set aside in a separat bowl.

Warm the water, milk and sugar to 105 F (40 C) degrees and add the yeast. Let the mixture swell for  20 minutes .
Start the machine on low speed and pour in the warm milk mixture.

Beat the egg  and pour it into the mixing bowl . Let the machine work on low speed until all the butter cubes are dissolved.
Then add 2 tablespoons of flour with a couple of minutes kneading between eash addition. When the dough comes together  and releases the bottom of the bowl,  do not add more flour, even if you have more left.

Cover bowl and place it a warm place by the stove and let it rise for 50 minutes or until double in bulk.

While dough is rising, prepair the pan with the caramel mixture.
In a small saucepan combine all ingredients and melt  over low heat. When everything is melted , pour it in the baking pan and spread evenly and sprinkle the chopped nuts on top.

Ah .. what a delicious dough:)

Press gently  down the dough,  into the bowl and let it rest for 5 more minutes.

Roll out a rectangle of (50 x30 cm) and pour over the melted butter. Brush butter over the dough evenly.

Sprinkle  the brown sugar, sugar and cinnamon on top and roll the dough   into a  log.

Divide log into two equal length by cutting in the midle. Cut eash log into  8 pieces and stick them in the caramel in the baking pan.
Cover the pan with a clean kitchen towel and let them rise for 30 minutes or until double in bulk.

Bake at 395 F (200 C) degrees in the middle section of the oven for 20 – 25 minutes.

Let the buns rest in pan for 5 minutes before the cuting around the  edges with a sharp knife. Invert the caramel rolls directly onto a serving tray. Remember to get all the goodys out of the pan.

Enjoyed the luke warm rolls  in good company of friends, family, neighbors and coffee :)
