  • 1 mango
  • 1 lime juice

Lime juice can be replaced with:

  1. 2 tablespoons of orangr juice
  2. 2 tablespoons lemon juice
  3. 2 tablespoons water 1 teaspoon sugar.
  4. Or other liquids that comine with the taste of your cake, pie or cheese cake.

4 drops lemon should always be added  to «highlight» the mango taste and preserving the color.

Cut and peel a  mango. It should fell a bit soft to squeeze,  is it hard  let it rest  a few days more before using.
Place mango  and lime juice  in a saucepan  over medium heat, simmer until tender, about 10 minutes. Stir often.

Poure the mango in a food processor and make it into puree.
Then it sieve the puree to remove the mango «threads» and lumps.
Put the puree in the fridge covered with plastic wrap.  The
puree stayes fresh in the frige for 4 – 5 days. You can also make a larger batch and freeze in smaller potions.
