I love cupcakes :)
They can be varied in so many ways  and today I would make me some Coca Cola cupcakes..
:)

First you have to make a strong coka cola extract, to  be used as a flavoring in both the cupcake and frosting .. measure up 2 drinking glasses of coca cola in a saucepan on medium heat. Let simmer and evaporate until you have about half a glass left in the saucepan. Stays fresh refrigerator  up to 2 weeks.

Let get started!

Let all ingredients  be at room temperature.

18 to 20 cupcakes.

  • 200 grams butter
  • 4 eggs
  • 180 gram sugar
  • 2 dl milk
  • 360 gram flour
  • 2 teaspoons baking powder
  • 1.5 dl coca cola extract

Cream together butter and sugar until  soft and light.

Add eggs and mix well between eash addition.

Sift all dry ingredients  in a bowl, and set aside.  Combine  wet ingredients in a bowl, ans set aside..
On mediun speed ,  alternately add dry and wet in tree additions. Stop mixer and scrape sides and bottom of the mixing bowl with a rubber spatula. Mix on high speed a few seconds. STOP !

Devide batter evenly 2/3 full  in a muffin pan lined with paper cupcake  liners.

Bake 355 F degrees, on midle/ lower section in the oven 18 to 22 minutes. When you gently press  on top of a muffin, you want to feel  that it pops up again .
Let the cupcakes rest  in the muffin pan for 10 minutes before  completely cools on a wire rack.

Coca Cola-butter cream!

  • 250 grams butter
  • 500 grams powdered sugar
  • 4 to 6 tablespoons coca cola extract

The butter should be at room temperature.
Add half the powdered sugar in  the mixingbowl with butter on medium speed on your standing mixer. Blend well and add remaining powdered sugar. Let the mixer run   until buttercream feels soft and fluffy.

Add Coca cola extract and mix for 5 – 10 minutes on medium speed.

Then it is ready to add color if you wish .. I devided the buttercream in two parts and added red color to one part.   I had both white and red buttercream  into the same piping bag  to get mixed pattern on the buttercream swirl.

    Hi, I’m curious, how did it taste? 🙂 Did reducing the Coke intensify the flavor? 🙂

      You will l have the real coke taste, not so mush intensyfied. You can use more coke and reduce for longer, almost to syrup and you will get a stronger taste.
