… Apple cake …
Serve with vanilla ice cream, fresh from the oven or heated in the oven for 5 minutes.
Serve as it is at a school meeting, the afternoon tea, or out of a lunch box .
Wash the apples well and remove skin if you want to. Slice into thin slices. On medium heat add a litle butter in a frying pan. Sprinkl apples slices with a little sugar and cinnamon. Place on a lid and let it cook to apples becomes tender. Stire every now and then.
Read the recipe and measure dry ingredients into separate bowls. Melt butter and milk together. Add egg and sugar in the bowl of your standing mixer.
Remember to sift all dry ingredients.
- 5 eggs
- 350 gram sugar
- 1 tablespoon wather
- 400 gram flour
- 4 teaspoons baking powder
- 2 teaspoons vanilla sugar or 2 teaspoons vanilla extract
- 220 gram butter
- 2 dl milk
- 6 to 8 large apples, the quantity to your taste.

Beat sugar and eggs for about 10 minutes at full speed, on medium speed add 1 tablespoon water and beat for another 5 minutes. Switch to blade atashment, on the Kenwood it looks like a K.
On medium speed, add dry and wet alternately without working too much between every additions. Turn off the machine and scrape down the sides and lift up from the bottom with a rubber spatula. Then turn the mixer on full for about 10 seconds. STOP !
Small sheet pan, mine is 10″ x 14″ , lined with parchment paper or greased well.
Pour 2 /3 of batter in the pan and level it with a spatula. Spread the apples evenly and pour in rest of the batter and level with a spatula.
Plain apple sheet cake!
If you don`t wat crisp coconut on top, just sprinkle some sugar and cinnamon on top.
Bake for 40 minutes in lower section of the oven at 370 F degrees. A tester incerted in center of the cake would come out clean.

Bake the cake in lower section of the over for 25 minutes at 360 F degree. Remove the cake from the oven and spread coconut mixture gently over the cake and bake for 20 to 25 minutes more at 345 F degree.
- 200 grams butter
- 200 grams sugar
- 200 grams coconut
- 4 tablespoons whole milk / heavy cream
- 4 tablespoons flour
In a saucepan warm all ingredients . Stir frequently, decrease the heat and stir until it thickens. Set aside but do not let it get too cold before spreading it on the cake.
Bake the cake in lower section of the over for 25 minutes more at 360 F degree.
Cool in pan for about 10 minutes. Transfer to a vire rack.
